Beat Vandy Tailgate Breakfast Casserole

Since this game seems to always be the morning SEC TV broadcast, this dish is perfect for that first mild morning game in October.

Chip Cates

Ingredients:

  • 5 slices white bread or crescent rolls
  • 1 package maple link sausage, cooked and drained
  • ½ stick of melted butter
  • 8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack or mozzarella cheese
  • 8 eggs, beaten
  • ½ cup cottage cheese
  • 1 cup milk
  • 1 teaspoon dry mustard
  • 1 can chopped green chili’s
  • ½ jar Walmart Southwestern Black Bean and Corn Salsa
  • Dash cayenne, black pepper, Old Bay and/or Tony’s

Preparation:

Grease the bottom of a 9"x13" pan. Tear up 4 slices of bread and place in the bottom of the pan. Sprinkle cooked crumbled sausage over bread pieces. Sprinkle ¾ the shredded cheese over the sausage. Mix eggs, butter, salsa, ¼ shredded cheese, chili’s, cottage cheese, milk and mustard together; pour over casserole.  
Set in fridge overnight

Another twist would be to shred up a left over baked potato and add to the egg mixture.

Add rest of cheese. Cook bacon and crumble over the top of the cold mixture. Bake at 350° for 40 to 50 minutes.

Serves 6 to 8.

Excellent if leftover is put into fridge and cut into squares the following morning for Sunday School quiche.
